Picnic Friendly Recipes
from Oliva!
Almost Flourless
Blood Orange and
Dark Chocolate Brownies
12 Servings
Prep Time: 15 min Cook Time: 30 min Total Time: 45 min
Ingredients
4 tablespoons Oliva! Blood Orange Olive Oil
2 tablespoons Oliva! Dark Chocolate Balsamic 1 stick unsalted butter, softened
6 ounces dark chocolate 60%+, shaved
2 cups sugar
5 eggs, whisked
1 tablespoon fresh orange zest
1⁄2 cup cocoa powder
1⁄4 cup all-purpose flour
1⁄2 teaspoon salt
Directions
1. Preheat oven to 325°F.
2. Grease a 9x13 baking dish with a drizzle of Blood
Orange Olive Oil.
3. Line the baking dish with 1 sheet of parchment paper
for easy brownie removal.
4. In a large glass or metal bowl set over a double boiler,
add the butter and dark chocolate shavings.
5. Cook over low heat stirring quite frequently until the
mixture is completely melted.
6. Remove from the heat and allow to cool for 5-10 minutes.
7. Once slightly cooled, gently fold in the eggs, Blood
Orange Olive Oil, Dark Chocolate Balsamic, sugar and
orange zest.
8. Whisk together the flour, cocoa powder and salt.
9. Slowly fold the dry ingredients into the wet ingredients
until fully combined.
10. Bake for 30-35 minutes or until a toothpick inserted
into the middle of the brownies comes out clean.
11. Allow to cool for 30 minutes before cutting. Enjoy!
Strawberry Basil Salad
Two servings
Total Time: 10 min
Ingredients
6 ounces baby spinach
1 cup fresh strawberries, halved with stems removed 1⁄2 cup feta, crumbled
1⁄2 cup walnuts, roughly chopped
2-5 leaves fresh mint
Strawberry Basil Vinaigrette
4 tablespoons Oliva! Basil Olive Oil
2 tablespoons Oliva! Strawberry Dark Balsamic 1 teaspoon Dijon mustard
salt and pepper to taste
Directions
1. Arrange spinach in the bottom of a large serving bowl (or Tupperware, if for a picnic).
2. Place strawberries, feta and walnuts evenly around the bowl.
3. Drizzle Strawberry Basil Vinaigrette over top and toss gently to combine all ingredients.
4. Finish with mint leaves. (These also can be chiffonade for bite-size pieces)
