TRUFFLE PARM SMASHED POTATOES

INGREDIENTS
1 tablespoon Oliva! White Truffle Oil
1⁄4 cup Oliva! Plain EVOO
16 ounces of small potatoes
1⁄2 cup freshly shredded parmesan cheese Parsley, for garnish
Salt and pepper
DIRECTIONS
In a large pot, cover potatoes with 1 inch of water and season with a generous amount of salt. Bring to a boil and cook potatoes for 10-12 minutes or until fork tender. Once cooked, remove from the water and allow to cool.
Preheat the oven to 425°F. Place a large baking sheet into the oven with nothing on it, allowing it to heat up. Once hot, add 1⁄4 cup EVOO and your pre-cooked potatoes. This will help crisp the potatoes from the get-go.
Using the bottom of a mason jar (or anything with a flat surface), gently flatten each potato to roughly 1” thick. Season both sides with salt & pepper. Roast for 12 minutes, flip and roast an additional 10 minutes or until the potatoes are nice and crispy.
Finish the potatoes with the White Truffle Oil, freshly grated parmesan and parsley. Enjoy!
