New Recipes
Gearing up for your Super Bowl party? Or maybe you want to try a new dish when hosting girls’ night! Our friends at Taste of Troy Food Tours have given us a couple of recipes sure to satisfy your hungry guests.
Slow Cooker Vegetarian Sweet Potato, Black Bean and Chick Pea Chili
1.25 lbs. sweet potato (peeled and diced) 1 can black beans, drained and rinsed
1 can chickpeas, drained and rinsed
1 red bell pepper, diced
1 poblano pepper, seeded and diced 2 carrots, peeled and diced
1 onion, diced
5 cloves of garlic, minced
1 teaspoon ground cumin
2 teaspoons chili powder
1 teaspoon unsweetened cocoa powder 1 teaspoon dried oregano
2.5 cups vegetable broth
1 can of diced tomatoes (or slow-cooked frozen tomatoes 12 ounces)
Serve with: grated cheddar, corn muffins, rice, and cilantro
Place all ingredients in a slow cooker, mix and cook on high for 3-4 hours or low 5-6 hours, until vegetables are tender. Add hot sauce to taste. Serve with toppings of choice.
Corny Corn, Cheese and Jalapeno Muffins
1 cup white whole wheat flour
1 cup yellow stone-ground cornmeal
4 teaspoons baking powder
1⁄2 teaspoon salt
1⁄4 cup of sugar
2 eggs or 1⁄2 cup of egg beaters
1 cup skim milk
4 tablespoons butter, separated and melted
1 cup cream-style canned corn
1 jalapeno chile, seeded and finely chopped
3 ounces grated cheddar cheese
1. In a large bowl, combine the flour, cornmeal, baking powder, salt and sugar
2. Heat oven to 400 degrees. Put 1 teaspoon butter in a skillet over medium heat, add jalapeno and cook gently for 2 minutes. Melt the remaining 3 tablespoons butter.
3. In a medium bowl, combine the eggs, milk, butter
and cream style corn. Add the cooked jalapeno. Add
this mixture to the flour mixture, stirring just until the dry ingredients are moistened. Stir in the grated cheese.
4. Butter muffin tins (either miniature muffin tins – yield approximately 36; or full-size muffin tins – yield 12-15) Fill mini muffin tins with 1.5 tablespoons of batter per muffin – Bake for 10-12 minutes, until golden. For larger muffins, fill tins 3⁄4 full with batter, bake for 20-30 minutes.
