Breakfast
HOMEMADE HASH & EGGS
(Gluten-free. Serves 2-3)
INGREDIENTS:
2 cups cooked ground meat (corned beef, beef, sausage, ham)
1-2 large cooked potatoes, diced (boil whole until fork tender, then peel)
1-2 teaspoons melted butter 6 poached eggs
Combine all items, except eggs, together. Form patty shapes and press into a heated frying pan. Brown lightly. Top with eggs and serve with toast and fruit. Note: To poach the eggs, spray a deep fry pan with cooking spray and fill with water. Bring to a boil. Crack eggs into a bowl, individually, and drop carefully into boiling water. Remove when water begins to boil again. Spoon on hash and enjoy.
