Lunch
PILGRIM SANDWICH (with Homemade Stuffing)
(Serves 2)
INGREDIENTS:
4 slices sourdough bread (buttered on 1 side)
2 slices homemade stuffing (see note)
2 tablespoons cranberry mayo, divided
10 to 12 ounces sliced turkey breast or deli turkey
Heat frying pan to medium. Add buttered bread and stuffing to a pan, searing stuffing and browning bread. Add cranberry mayo to bread and then add turkey. Add stuffing to complete the sandwich and remove when lightly brown. Cut and serve.
STUFFING:
2-3 cups of leftover bread ends or stale bread, broke into pieces 1 stalk of celery, chopped
1⁄4 of an onion, chopped
1⁄4 cup melted butter
1 cup chicken bouillon (added gradually) Pinch of pepper
Pinch of granulated garlic
Mix all dry ingredients with butter and add broth to desired moistness. Press into greased casserole or baking dish. Bake at 400 degrees F for approximately 25 to 40 minutes or until firm. Leftover stuffing can be cut and frozen for future meal or sandwiches.
INGREDIENTS:
2 large chicken breast
(fileted and gently pounded) cut into medallions
8-12 ounces mushrooms, sliced 1⁄2 cup gluten-free flour
1⁄4 teaspoon granulated garlic
1⁄4 teaspoon black pepper
Salt, to taste
3⁄4 cup Marsala wine
1 tablespoon olive oil
1 tablespoon butter
1⁄4 cup sundried tomatoes (optional)
Combine flour, garlic and pepper in a bowl and mix well. Dredge chicken pieces in flour mixture. In a medium-hot frying pan, melt butter and blend oil until hot. Add floured chicken and cook for
2 minutes on one side. Flip chicken, add mushrooms and a light sprinkle of salt. Cook for 2 minutes. Stir mixture and add wine. Reduce heat to low and simmer for 8 to 10 minutes until chicken
is cooked through (not pink and juices run clear). Stir in sundried tomatoes to warm. Serve with choice of side. (It is shown with Goat Cheese Mashed Potatoes, but egg noodles are another excellent option for a side.) Goat cheese mashed potatoes are prepared by boiling peeled potato in lighted salted water until desired tenderness. Drain, add butter, milk and additional salt to taste and then mash. When mashed to desired consistency, add goat cheese crumbles and stir to blend. Serve immediately.
